When the Nights Return

August in Finland. The nights, almost absent in June, are beginning to return — and the forest floor is heavy with blueberries waiting to become Mustikkakukko.

August in Finland.

The nights, almost absent in June, are beginning to return.

There is a faint chill in the morning forest.

Moss gives softly beneath rubber boots, and birch leaves whisper overhead.

A bucket in one hand. In the other, a marjanpoimuri — a Finnish berry picker. Its comb-like teeth slide through the low shrubs.

Shhhrrk.

Dark blue berries loosen from the leaves and tumble into the wooden scoop. Pinch one between two fingers and the thin skin breaks, staining the thumb purple. Before long, the colour has settled around the fingernails too.

By the time the forest is left behind, the bottom of the bucket has disappeared beneath a deep blue layer.

Back at the mökki, afternoon light falls lower through the kitchen window. The oven begins to warm.

Sugar, rye flour and baking powder go into a bowl. The rye flour is not white. It falls with a little more weight, soft grey against the bowl.

Butter is melted in a small pan and poured in. There is no dramatic sizzle. Only the dry flour darkening by a shade, the wooden spoon turning until the loose grains begin to gather like damp sand.

In another bowl, the blueberries are dusted with sugar and potato starch. The bowl is tilted gently so the berries roll without being crushed. One turn. Then another. A pale veil clings to the blue skins.

The baking dish is buttered. The rye mixture is pressed across the base and up the sides, rough beneath the fingertips, keeping the faint impressions of each touch.

The blueberries are tipped in. They scatter across the rye in a rush of dark blue. The remaining dough goes over the top. Little by little, the blue disappears.

The oven door closes.

After a while, the air inside the mökki changes. First comes butter and the dry, toasted scent of rye. Then, underneath it, the sharp sweetness of warming berries.

The window is opened a little. Cool forest air meets the warmth drifting from the oven.

The crust moves from pale brown to the colour of honey. The edges deepen. Fine cracks appear across the top. From one of them, a bead of purple rises. It swells once, then quietly bursts.

The dish is carried to the table. Tiny bubbles are still breaking somewhere beneath the crust.

A spoon goes in. Crack. The rye crust gives way. Beneath it, the filling appears — dark, glossy purple. As the spoon lifts, a thin line of hot berry juice slips over the edge and falls back into the dish.

Beyond the window, the light over the lake has already thinned. One star — a star that June did not have.
